Ingredients For Moroccan Chickpea Tagine with Couscous
For the Tagine:
2 tablespoons olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 teaspoon
ground cumin
1 teaspoon
ground cinnamon
1 teaspoon
ground turmeric
1/2 teaspoon
smoked paprika
1/4 teaspoon
cayenne pepper (optional, for heat)
1 can (15 oz) chickpeas, drained and rinsed
2 cups diced tomatoes
1 cup vegetable stock
1/2 cup diced carrots
1/2 cup diced zucchini
1/4 cup dried apricots, chopped (optional, for sweetness)
Salt and pepper to taste
For the Couscous:
1 cup couscous
1 cup boiling water
1 tablespoon
olive oil
A pinch of salt
Cooking Steps For Moroccan Chickpea Tagine with Couscous
Prepare the Tagine
Heat olive oil in a large pot or skillet over medium heat. Add onions and garlic, sauté until fragrant.- Stir in cumin, cinnamon, turmeric, paprika, and cayenne pepper. Cook for 1 minute to release the spices’ aroma.
Add chickpeas, diced tomatoes, vegetable stock, carrots, zucchini, and dried apricots. Season with salt and pepper.
Simmer for 20-25 minutes until vegetables are tender and the flavors meld together. Prepare the Couscous
In a bowl, combine couscous, olive oil, and a pinch of salt. Pour boiling water over the couscous. Cover and let it sit for 5 minutes.
Fluff with a fork before serving.
Serve and Garnish
